A planned migration keeps mail flowing. Mail is copied ahead of time, the final switch of the delivery address is scheduled at a quiet time, and a short delta sync brings across the last messages. Users usually notice a change of sign-in, not a gap.

Yes. The platforms keep your service running, but they are not a full backup of your data. Accidental deletion, ransomware and departing staff can all cause loss that the platform will not undo. Third-party backup closes that gap.
